The first frosts have arrived here on Mols, this wild and ancient part of Denmark, and another honey season is at an end. The bees are huddling together for warmth, the weary beekeepers packing up and heading indoors to do the same. 2012 has been a challenging season for the bees, with only a few short bursts of honey weather between the wind and rain. The Helt bees did manage to gather some surplus honey though, and we are now very busy with labelling and packing our precious harvest. This is slow but satisfying work, the final act before the fruits of the seasons labour are sent out to stores across the land. The journey began with sweet nectar from a delicate spring flower on Mols, then a bee, a hive, a beekeeper, a jar, a label, a shop, a customer, with the journey ending perhaps on a slice of toast in an apartment somewhere in Copenhagen. This is the food chain, timeless and simple, and it tastes pretty good too.
